Baked Butternut Squash

A dwindling pantry is the mother of culinary invention.

    Ingredients

    Fresh locally right now
  • 1 butternut squash, halved lengthwise, seeds removed
  • 1 Bartlett pear, halved lengthwise, cored

    Sweet(er) Option

  • 2 tsp. brown sugar
  • 2 pinches nutmeg

    Savory Option

  • 4 pats butter
  • 2 pinches salt

Lay pear halves in hollows of butternut squash halves. Bake at 400 deg. until squash is soft (about 1h 15m). Season with brown sugar or butter, either of which will melt, and nutmeg or salt. Share with a friend.
